  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with 12 cupcake liners.
  2. In a large mixing bowl, whisk together the almond flour, sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, melted butter, lemon zest, and lemon extract.

  • 2 tbsp butter, softened
  • 1/4 cup powdered sweetener (such as erythritol or monk fruit)
  • 1 tsp lemon extract
  1. In a medium mixing bowl, beat together the cream cheese and butter until smooth.
  2. Add the powdered sweetener and lemon extract and beat until creamy.
  3. Frost the cupcakes with the cream cheese frosting and enjoy!
